I would say 1966 ( by the numberplate and also the first year of the 2+2 ) E-Type 4.2 Litre.

Anyone know the history of this car, where it was sourced or why it had odd red pinstriping down the sides?

The film's Wiki page says the car survives in a private collection.
So, perhaps not destroyed?

GFW 223D listed as chassis 1E50026

The black 2+2 with GPW 223D plates and strange red pinstriping was used as shown and apparently wrecked onscreen. A silver 2+2 in rough condition surfaced in 2011 with GPW 223D plates, auctioned at Coys Auction Ascot on 8 October 2011 with accompanying film pictures associating it as the Brannigan car.

This silver semi-derelict was bought by a Scottish buyer who "painstakingly" restored it to black (without the red pinstripes), but apparently DVLA would not re-issue the GPW 223D registration despite his protracted attempts, so it received HAU 727D plates. HAU 727D was auctioned online on 7 March 2025 for a winning bid of £45,100, including a Jaguar Heritage Trust Production Record Trace Certificate but without any Brannigan reference in the listing.

No idea about the 1975 pinstriping - maybe just a bit of fun by an early owner. I suspect 2 cars involved as I can't see how the upturned riverbed wreck in the film could have survived to become silver GPW 223D; however that may just be filming witchcraft with a substitute something, and the GPW 223D to HAU 727D link may well be genuine as claimed.
