I just saw this movie tonight. There's a great line that goes with this scene.

[Scene: waves crashing on the beach]
Vincent (the narraror): I was conceived on the Riviera. Not the French one. The Detroit one.

That model of Riviera has a fixed back seat and real shelf area...it's not like a hatchback with a flat load area where one can lay down.
To get that shot, the film makers must have built a wooden frame to create a flat area for the actors to lay, it would have extended well into the front seat area, and depending on the size of the actor, his feet were probably touching the steering wheel.
Also, they would have had just a couple of feet between where they were laying and the headliner of the car...you can see that in the photo, note how close the actresses head is to the glass.

Again, in films what you see is not always real.
