It's a 1972 ( by the numberplate ) Fiat 600D.

The Fiat 600 was a very popular car in Portugal and the Seat 600 was never sold here.
I've never seen this type of "atrocity", but perhaps it was just made for filming purposes and wasn't really homologated.

No, it was the Seat version of the Fiat 500 Jolly: http://antp.be/pic/mp_seat500.jpg
(on the photo it is my father long time ago, my parents rented that car when they went to Spain for their "wedding travel")

Just for be precise, the front-hinged doors'600 D were built thru 1965 to 1969;the model shown could be 1972 only if:

1)in 1972 Fiat-SOMAVE(Portuguese assembler-Distributor)kept still alive locally that model's production, when in Italy was already ended by 2 years before(Idon't knew better that thing, maybe rpcm knew something of more about)

2)the plate was 1972(as says rpcm),but car could be re-registered with a recent plate after body modification(artisanal,no Ghia Jolly body,'cause retains still doors)and couldn't be plate of originary 1st registration

In fact, some Fiat models ( the 600 included ) were assembled in Portugal by SOMAVE, in the town of Vendas Novas. Although I cannot tell exactly when the production ended, the Fiat 600 D was sold here until 1973. So, a 1972 numberplate is perfectly adequated for a Portuguese 600 D.
As I previously said, I suppose this type of "conversion" was done just for filming purposes and could not be homologated ( as aditional information, when a conversion was done in a VW Beetle, for example, the car kept the same numberplate, so the case of second numberplate doesn't apply ).
As a curiosity, here can be seen, at least, two 1972 Portuguese cars.

By the photos linked by rpcm, note that Portuguese-made 600 D includes also"D" version-letter on engine hood logo, imaginate specific for Portugal's market(in Italy on the same model was written only"FIAT 600"without "D",600 D name was used only into ads, articles and sales literatures, but don't appear on vehicle)
