Website says it's built on a 1966 chassis:

Then I wouldn't list it as a Hebmüller. What's chassis number 116751671 correspond to?

A Typ 1, MY1966

It's a common thing to do a swap when parts are too far gone or not available. Usually a part from the same era. This is a 'modern' chassis. It's then no longer original, but this is already stated in the listing?

Update: Listed now as a 1966, so problem solved then?

It's the Theseus parodox, actually, with a modern twist. Oil, brakes, bulbs and more will have to be changed, over time. The originals wear out. When it comes to paint, original worn paint is often more desirable than fresh paint. The main parts may, like chassis or engine, or wooden components, rust or they need replacing, seats and interior will disintegrate, so not many cars will be truly original forever.

Even if you choose to weld new metal where rust appears, you obtain 'original' fabric for interior, and you restore your original engine, anyway not even this would be fully original, would it (but much, much closer, you could even agree it was repaired, but not restored?)

Volvo used this promoting original parts. The text was something like 'When is your Volvo no longer a Volvo?' and the illustration showed two parts that looked the same - only one was an original Volvo part
