In this film Bond doesn't drive a car (the only Bond film where this happens) but he gets to ride in Japanese secret service agent Aki's Toyota 2000 GT. This car has some special features of it's own, a communication system with a TV screen behind the seats. She uses this to call for help when being chased by some thugs in a Toyopet Crown and the matter is swiftly dealt with.

Pour être plus précis, c'est une Toyota GT2000, un voiture qui fut commercialisé par Yamaha sous forme d'un coupé. La Toyota GT2000 n'était qu'un prototype.

It was just a coupe, but it's been said that Sean Connery found it too hard to get in quickly, so Toyota cut the roof off & made it into a convertable.

If you look at the 4th thumbnail the car has a different dashboard to the one in the 5th thumbnail (with wood panelling and a wooden steering wheel).

Yes, that was probably because of his height (6'2") when he rides in it his head sticks out over the top of the windscreen.

Special car this, only 337 were made (and only 2 existed in open-top form, they were specially made for the film).

G-Mann, you're right, the scenes showing Connery and Aki in the car from the back were made in England (instead of Japan) in a different car.
I always wonder what car was used as I can't recognise this dashboard.
Another interesting fact is that Aki didn't know how to drive and it's racing Toyota pilotes (Hiroshi Fushida and Tomohiko Tsutsumi) who take her place for the scenes the car was moving.
Two cars were specially made for the movie. One has been destroyed 3 years after the movie was made and the other one is in Toyota Museum.
This one has been stored in South Africa for some times (why ?) and eventually found in Hawaii and bought by Toyota Japan.
Some replicas were build by fanatics, 2 are in USA, 1 in Japan and 1 in England in the "Cars of the Stars Museum". This last one got the original panel with the TV communication system.
That's it.

4th thumb looks a bit TR4-ish (eg windscreen shape, steering wheel), but not completely convincing details on central dash. But is it actually a car or a mock up? Speedo or rev counter pointing to zero, screen rail has no sun visors or hood catches, and if it's the same as the 3rd and 6th thumbs no windscreen glass.

The car used for studio filming indeed seems to be a Triumph indeed. The model which comes closest is the TR4 (although the TR5 also matches, but the first unit was produced two months after the film was presented to public):

I know this is an ancient comment, but just for posterity, he does drive in YOLT - when he and Aki leave the sumo wrestling match, Bond drives the Toyota 2000GT and Aki rides shotgun. Moonraker is the only Bond film where he doesn't drive a car at all.

It is not a Triumph because it has a leather-wrapped dashboard rather than a wooden one like the TR series. It is also not a Honda S800, MGB, Nissan Fairlady, Fiat 1500 Convertible, Aston-Martin or Maserati as I checked them all too, as well as Lancias and Alfa-Romeos.

Apparently it was a Sunbeam Alpine as recognised from the dashboard and steering wheel in the over-the-shoulder shots, and the windscreen frame matches; however the rear view mirror was repositioned for continuity reasons.

The car used for interior shots made at Pinewood Studios definitely was an Alfa Romeo 2600 spider Touring:

Note that the passenger's seat was replaced with a flatter wood box in order to show Sean Connery at the correct height in the car.

The problem is - you can't just take a coupe and cut the roof off and produce a convertible because you loose all the strengthening to the chassis that the roof structure provides. It would have cost Toyota millions in development costs to re-design the chassis and tooling to mass-produce a convertible version, and with such ridiculously low production numbers involved this would have been unjustifiable at the time, no matter how tempting. Plus, as others have stated, it doesn't look like it would have suited European or American markets due to the small cabin size - another re-design cost!
